pans to give uniform shape. They also help to control oven spring and assist
in smooth moulding, reduce dough tearing and help to cut spring back.
Relaxants are particularly useful for controlling the shape and quality of rolls and buns, pizza bases, flat breads, baguettes and a wide range of pastries.
